Choc Chip Pancakes

If this isn’t the ultimate weekend brunch treat then I really don’t know what is! Believe it or not, this pancake recipe is also refined sugar-free, gluten-free and oil-free. Give it a go for your next breakfast!

MAKES: 2 SERVES PREP: 10 MINS COOK: 15 MINS

INGREDIENTS: 

  • 1 cup buckwheat flour

  • 1/2 tbsp ground flax seeds

  • 2 tsp baking powder

  • 1/2 tsp cinnamon

  • Pinch of salt

  • 1 cup almond milk

  • 1 tsp apple cider vinegar

  • 1 tsp vanilla extract

  • 1 tbsp maple syrup

METHOD: 

  1. Combine the almond milk, apple cider vinegar, vanilla and maple syrup into a bowl.

  2. In a separate bowl, combine the remaining dry ingredients. Pour the wet into the dry and mix until you get a smooth batter.

  3. Laddle the batter onto a griddle/pan preheated on medium heat and cook each pancake for 2-3 minutes on each side until golden and fluffy.

  4. Transfer to a plate and top with your favourite ingredients! I topped mine with healthy chocolate sauce (recipe is in my ebook www.cherietu.com/ebook) and a scoop of salted caramel ice-cream (not exactly healthy but it’s vegan so that’s a win in my books hahaha). Enjoy!!!!!
