Choc Hazelnut Cheesecake
Now… I’m sure we all remember eating spoonfuls of nutella as a kid (trust me, been there done that). From there on I fell in love with the combination of chocolate & hazelnut, they are seriously a match made in heaven! Here’s another epic no bake cheesecake recipe for you to try:
CHOC HAZELNUT CHEESECAKE
Now you know how much I love making these no bake cheesecake recipes, so I hope you enjoy another decadent recipe! These babies also happen to be oil-free, gluten-free & refined sugar-free… Yay for healthy yet delicious tasting desserts!
MAKES: 6 PREP: 20 MINS SET: OVERNIGHT
3/4 cup raw cashews, soaked overnight & drained
3/4 cup raw hazelnuts (no skin), soaked overnight & drained
1/4 cup canned coconut cream (white solid part of a chilled can)
1/4 cup coconut yogurt (or sub for 1/4 cup coconut cream)
1/2 cup maple syrup
1 tsp vanilla extract
1/8 tsp salt
1 cup warm coconut milk
2 tbsp cocoa powder
Combine all ingredients except for the cacao into a blender and blend until smooth & creamy.
Pour half of the filling out into a bowl, then add 2 tbsp cocoa powder to the remaining batch and blend until smooth.
Evenly pour the chocolate filling into the bottom half of 6 silicone cupcake moulds and pop into the freezer to set. Once set, pour in the remaining vanilla layer. Freeze overnight.
Remove from moulds & decorate with your favourite toppings. Allow to sit at room temperature for 10-15 minutes before serving.
